So, eight 4K is the equivalent of 32 1080p. However, keep in mind that multiple graphics cards do NOT provide the total memory of the gpus, The gpu memory is the memory of one card, additional cards mirror that memory, they do not add to it.

what about multiple video cards? can I slap two quadros with the sync card in a single pc and use 8 outputs with watchout 7?

yes. note, Dataton WATCHOUT 7 does not specifically support multiple video cards. it does not prevent multiple video cards either. all testing is performed with single video cards. WATCHOUT 7 simply interacts with the graphics card through standard methods. from their, the gpu driver and its configuration determine results. also note, the graphics memory is determined by the memory on one card. so if you have two 8gb graphics cards, you have 8gb of total graphics memory, not 16.
